Need to control Yamaha Ez-Eg Guitar

Just to make sure I'm buying the right software: I'm just starting out with a small midi rig. It's a Yamaha EZ-EG guitar-like controller into a Roland JV-1010 synth. It works great but the controller puts out midi on 6 different channels, channel 1 for the first string through channel 6 for the sixth string. Obviously the synth will only respond to one channel at a time. For starters I simply need to take channels 2-6 and put them on channel 1. I don't even need to know how to do it, I just need to know that it's doable before I buy the software.

I'm a computer engineer and I've programmed in machine code for years so I'm comfortable with hex, etc.

This is definitely what you want. In fact, you can easily do this with just the Classic version (hence, free!)

Just set the incoming signal and set the outgoing signal with a different channel.
